Ingredients:

– Mayonnaise, 1/3 cup
– Sour cream, 1/3 cup
– Apple cider vinegar, 1 tablespoon
– Kosher salt, 1 and ½ teaspoons
– Ground black pepper, a ¾ teaspoon
– Deli coleslaw mix, 16 ounces
– Ground sirloin, 1 pound
– Steak sauce, 2 tablespoons
– Toasted Hamburger Buns, 4
– Warm chili, 16 ounces

Directions:

• Preheat the grill at 350°-400°F. Whisk the mayonnaise apple cider vinegar, sour cream, ¼ teaspoon pepper, and ½ teaspoon salt, in a pot.

• Add the coleslaw mix and toss for coating. Cover the mixture and keep to chill.

• Mix steak sauce, ground sirloin, 1 teaspoon salt, and the remaining pepper in a bowl. Shape the mixture into 4 patties.

• Grill both sides of the patties for 4-5 minutes each, covered with the grill lid. Cook until the center of the patties becomes light brown.

• Put the patties inside the buns. Top it with coleslaw mixture and chili.

Total Time: 1 hour and 20 minutes
Yields: Serves 8-10

Ingredients:

– Poblano pepper, 1
– 1 white onion, chopped coarsely
– Garlic cloves, 2
– Cilantro Leaves, ½ cup
– Corn chips, finely crushed, ½ cup
– Milk, ¼ cup
– Large eggs, 2
– Kosher salt, 1 and ½ teaspoons
– Black pepper, freshly ground, a ½ teaspoon
– Ground chuck, 2 pounds
– Cooking spray
– Red chili enchilada sauce, 2 cans
– Chicken broth, 2 cups
– Sugar, 2 plus 2 and ½ tablespoons
– Sour cream, 1 cup
– Lime zest, 1 teaspoon
– Fresh lime juice, 2 tablespoons
– Corn tortillas, warm

Directions:

• Heat the broiler. Broil the poblano pepper for 6-8 minutes placing it on a baking sheet that is lined with an aluminum foil. Turn the pepper occasionally.

• Put the broiled pepper in a zip-lock plastic bag for the freezer. For loosening the skin put it aside for 10 minutes.

• Peel the poblano. Discard the seeds and stem. Ready a food processor. In it pulse onion, garlic, cilantro, and poblano until chopped finely.

• Stir milk and corn chips together in a pot. Wait till the chips soften. Add the eggs, pepper, salt, and the poblano mixture. Add the ground beef. Mix everything very well.

• Make 35-36 meatballs. Place all meatballs apart from each other on a greased jelly –roll pan which is lined with an aluminum foil.

• Before baking heat your oven at 400°F. Now place the pan inside the oven. Bake the meatballs for 10-12 minutes; they will turn brown. Transfer the meatballs to a Dutch oven.

• Add in chicken broth, enchilada sauce, and sugar- 1 tbsp. Boil it over high heat.

• Reduce the heat to medium. Cook for 15-20 minutes. The sauce will slightly thicken. Halfway through the simmer, turn the meatballs.

• Whisk the sour cream, lime juice, and zest together in a bowl. Season it with salt and a little bit of sugar.

• Pour the sour cream mixture over the meatballs before serving.
