Pork Chops A La Madrilene

Ingredients
- 2 cloves garlic
- 1 medium onion
- 5 tbsp Spanish sweet paprika
- 4 springs parsley
- 5 tbsp olive oil
- 4 pork loin chops (5 oz each)
- Salt and pepper to taste
Instructions
Note- Use either boneless pork loin chops or pork chops sliced about 1/3 – 1/2 inch thick.
1. Preheat the oven to 425 F.
2. Chop the parsley, onion & garlic. Put in a medium-sized bowl and mix all together.
3. Season with salt, pepper, & paprika. Put the 3tbsp of olive oil to moisten the mixture, and it should be a fairly thick consistency.
4. Take oil and grease pan or line it with aluminum foil. Season the chops, wrapping them with the mixture, and put them in a roasting pan.
5. Roast in a hot oven for around 12 mins. Turn chops over, spoon the onion mixture over the chops, and roast again for 12 mins. If pork is cooked, but the onion mixture is not cooked, sauté it in a frying pan until cooked.
6. Serve the pork chop with herb sauce over it. Add mashed potatoes (optional) on the corners for a wonderful Spanish dinner.

Ingredients
- 1 chicken (8 pieces of breasts & legs or cut into 8 pieces)
- 2 cloves garlic
- 1 Spanish chorizo sausage
- 1 yellow onion (peeled)
- 2 red peppers
- 2 -3 sprigs of parsley
- 3-4 tbsp olive oil
- 1 cup white wine
- Salt and pepper to taste
- 1 cup chicken broth
- 8 oz frozen peas, 15 oz can peas
Instructions
1. Peel & chop onion & garlic into thin slices. Take out the stems and seeds and cut the red peppers into strips.
2. Cut the chorizo into rounds. Chop parsley.
3. Heat a heavy-bottomed large pan and add 2 tbsp olive oil, and brown the chicken on both edges.
4. Add garlic, onion & sauté until onion is sheer. Then add peppers, parsley, chorizo & cook for 10 mins.
5. Add vegetables, chicken broth, and white wine. Stir.
6. Cover & cook for 40 mins. 5 mins before removing chicken from the stove, add peas.
7. Serve and enjoy!

- 1/2 cup chopped green pepper
