For a fun and unique treat, try making your own tortilla chips, which you can then place inside the shell of your choice (I like ciabatta). After you have prepared the chips, place in salsa and/or sour cream and serve. with your choice of sides.

Beef Tacos: These are easy to prepare and they go well with all kinds of fillings. For a Mexican twist, try making beef tacos with jalapeno or chipotle sauce. or a chili-reduced sauce. Also, try serving them with shredded cheese and black olives, if you wish.

Carne Adobo: Another favorite of mine is the traditional Mexican dish that involves making beef and beans and then baking them in a casserole. The end result is a tasty casserole that is not too heavy on the stomach and has lots of flavor. Try making the filling first, then bake the casserole. To enhance the flavor, you could also add chili powder or ground black pepper, oregano, thyme, cumin and garlic powder, if preferred.
