  • Ground beef: 1 pound
  • Salsa: 2 cups
  • Chili beans: 1 can
  • Tortilla chips: 3 cups
  • Sour cream: 2 cups
  • Black olives: 1 can
  • Green onion: ½ cup
  • Tomato: ½ cup, chopped
  • Cheddar cheese: 2 cups


  • Preheat oven at 350 degrees F.
  • Take a big skillet and place it on medium heat. Cook beef until it changes color. Add salsa and reduce the heat. Simmer for 20 minutes so that all the liquid gets absorbed.
  • Now add beans and increase the heat.
  • Take a baking dish and spray it using cooking spray. Arrange tortilla chips in the dish and place the beef mixture on the chips.

  • Corn muffin mix: 1 box
  • Egg: 1
  • Sour cream: ½ cup
  • Creamed corn: ½ cup
  • Chili powder: 1 teaspoon
  • Extra virgin olive oil: 1 tablespoon
  • Onion: 1
  • Garlic cloves: 2
  • Ground cumin: 1 teaspoon
  • Black pepper: ½ tsp
  • Kosher salt: 4 pinches
  • Ground beef: 1 lb.
  • Red enchilada sauce: 1/3 cup
  • Shredded cheddar: 1 cup
  • Monterey jack (shredded): 1 cup

  • Preheat oven at 450 degrees F.
  • Take a microwave-safe skillet and grease it with cooking spray.
  • Now take a large container and whisk together egg, muffin mix, creamed corn, and sour cream.
  • Transfer this mix to the already prepared skillet.
  • Bake for twenty minutes. Allow it to cool.
  • Meanwhile, put a big pan on medium heat and add some oil.
  • When the oil turns warm, add cumin, onion, chili powder and pepper and salt for seasoning.
  • Cook this mixture for around five minutes.
  • Next, add garlic and ground beef and cook for six minutes. Use a spoon for breaking up beef. Drain fat.
  • Now poke the entire surface of the cornbread by using a fork. Once done, pour the red enchilada sauce on the cornbread. Place beef and use cheese as a topping.
  • Cover the whole thing with foil and then bake for twenty minutes. Switch your microwave to broil and remove the foil.
  • Broil until the cheese turns golden or for around five minutes.
