Oh, the heavenly belly of pork in the oven! God was having a free day when he made the pig and must have felt like we deserved something in return for all the plagues and famine and diseases. And so he intertwined muscle tissue with the most delicious ratio to soft fat possible and put it into the center of the most edible animal domesticated. And thus, we have pork baked belly.

I used to think the best thing you could ever do with pork belly was applying the correct procedural smoking and curing techniques to arrive at one of the holiest foods known to the human taste spectrum – BACON!
How To Bake Pork In The Oven? Is It Time Consuming?
And that is still mostly true. But there’s a lot of work, er, time involved in making bacon. Not a lot of work, the salt and smoke do most of the work for you. But it does take time. So for a more instantly gratifying experience with your PB, I like to slowly braise it till tender in some apple cider vinegar and brown sugar or maple, with some garlic, wine, and Dijon mustard. When sufficiently tenderized from its nice little bath, remove the PB and dry off (the remaining liquid can be reduced to a tasty sauce).
Method To Bake Pork In The oven
Heat a pan with a little oil or butter, sear your pork on a few sides and enjoy the textures and flavors of the ultimate carnivore treat.
Turn oven to the highest temperature you can get it. Using a Stanley knife score the skin down to the meat (try not to cut the flesh), make the cuts very close together (go across the surface). Put the fennel seeds and the Maldon sea salt in a pestle and mortar and grind till the seeds are smashed and mixed well with the salt.
How To Bake The Pork
Drain half the grease over the tip of the coat of the pork stomach. You can Spray over ½ of the fennel and seasoning mixture and rub in. Pour over the remaining oil and then the seed and salt mixture. Now, rub this into the skin so that everything gets in between the skin and down onto the meat. Wash the carrots and celery thoroughly, cut them into large 2-inch pieces, and throw these into the base of your roasting dish. Throw in the whole garlic bulbs, peel and cut the onions into large wedges. Toss in the entire thyme leaves.
Bake The Juicy Pork Baked
Take the meat from the tray and place onto a wooden board and allow to rest while you make the gravy. Put the dish of roasted vegetables directly onto your stovetop and on medium heat add in the flour and stir till thick. Cook for 1 minute then adds in the remaining wine. If your sauce is too thick, add a little more white wine. Using a potato masher, mash up the vegetables until you have a delicious thick looking sauce — Cook for 2-3 minutes on low heat. Taste, strain through a sieve keeping all the lovely sauce for pouring over the roasted belly.
Before Serving The Baked Pork
Remove the crackling from the top of the belly and break up into pieces, set aside, then pull the pork belly apart and enjoy with more vegetables and your homemade gravy.
